- Condensation is caused by hot, moist air meeting a cooler surface (i.e. the oven door). You cannot always prevent it, but you can minimise it when it happens by doing the following: Pre-heat the oven at a high temperature before putting food in the oven, and cover the food you are cooking wherever possible. Whenever you can, cook wet foods at higher temperatures. Don’t leave food in the oven to cool down. Automatic cooking will normally produce condensation when the oven is cooling down with food inside.
